  • Buying Tip: When buying shrimp for this recipe, look for raw rather than pre-cooked. Pre-cooked shrimp go rubbery when they get reheated in a hot pan, and since the sauce finishes cooking around the shrimp, starting with raw shrimp gives you a much better texture in the final dish.

  • Swap Tip: Fettuccine is the traditional pasta for Alfredo, but linguine or spaghetti work just as well if that is what you have at home. The sauce clings to long pasta shapes effectively, regardless of the specific variety, so there is no need to make a special grocery run just for the pasta.
